"If you Like Pina Coladas..."

Do you find your brain to be much more creative and free-thinking late at night? Mine is, for some reason I always do my best thinking right around the time I should be dreaming. A few nights ago, while trying to sleep I thought up this...





It's a Pina Colada Trifle, and it was so good. I'm sure it's not exactly an original idea, but I'm pretty proud of it just the same. Trifles are cool because you can do them a thousand different ways. This is how I made mine (rememeber, I don't measure):

1 Yellow Cake mix
1-2 cans crushed pineapple
1-2 cups coconut
1 large box banana pudding prepared according to box
2-3 bananas sliced
1 small container cool whip
maraschino cherries if desired.

Prepare the cake mix in a 9x13 inch pan and let cool. Cut cake into 1 inch squares. In a large bowl layer cake, pineapple, coconut, pudding, bananas and coolwhip several times until layers reach the top of the pan. Complete layers with coolwhip, sprinkle with coconut, and garnish with cherries. If you can, let the cake sit for an hour before serving, the cake gets soaked with the pineapple juice, and even though it's not as pretty, it's so good. If you're feeling really fancy, or serving a small crowd, put the trifle in sundae or margarita glasses for a fun presentation.

You could change a lot about this too, add caramel and pralines, use custard instead of pudding, you really can't mess it up. Have fun!

Glenn made this awesome toy box over a year ago, and as you can see, it's chuck full of toys. The funny thing is that our kids have absolutely no interest in the box, or it's contents until a friend comes over, then it's a complete fight for who can get the most toys to themselves. Jayda goes as far as to get INTO the box to claim her territory. It's really funny to me. Anyway, this is Janna's little girl Audrey with my kids swarmed around the usually neglected toy box.




We got this tricycle over a year ago thinking that at one and a half she'd be able to ride it! But it was worth the wait because she's just now getting the hang of it and loves to take it for a spin.











Baby Haven, or Mr Weathersby as he is oftentimes referred to, smiling at his daddy (my brother Kendall). I can't believe how big and ADORABLE he is getting!




Last week Glenn and I were able to double date with my old Practicuum Instructor Kelly and his friend Lisa. Kelly was the one who walked me through my internship my last semester of college and got me through some pretty crazy experiences with our clients. He's an MSW in Idaho Falls now and starting a new job. It was so fun to see him again--gosh dang, am I short or what!?







This is just a cute picture my kids sharing a recliner. It's also a good demonstration of times to come. I feel like I spend a lot of time defending Skyler, since Jayda is a bit of a bully. However, I've been seeing Skyler's potential lately, and he's becoming quite the force to reckon with. He may be quiet, but his attacks are lethal. Not to mention the two of them weigh about the same and wear the same size diaper! Jayda better look out!







Last weekend I went to visit my friend Suzanne, who was actually staying at her brother's to watch her neices and nephews. All of the kids were in school except for her neice Briley. Jayda was able some girl time with her new friend, which included coloring, watching Strawberry Shortcake, and sitting at the breakfast bar for lunch like a big kid. I guess she really is becoming a big kid, sheesh, where does the time go!

I love these pics because I caught them in motion. Glenn was bouncing Skyler on his knee, which is the funnest, most hilarious, thing in his world.





Maybe the scales aren't going down at record pace, but after over a year, my wedding ring finally fits my finger again! It puts a halt to my late night galavanting, but it's nice to be able to show that I'm married again, plus, it's a gorgeous ring that Glenn picked out himself.

Lia Sophia Partay!

So my Lia Sophia party was a lot of fun and I really enjoyed getting to see everyone! Part of having the party was a way for me to get to see a lot of my friends again before moving. I'm starting to get this heavy realization that I really am moving far away and I am so going to miss my rockstar family and friends!



Of course, the jewelry was beautiful too, and a major weakness of mine!

Imade stuffed strawberries, which were SO pretty and easy to make. I did regular pretzels and chocolate covered pretzels, and regular strawberries for people with an distaste for cream cheese. On the big platter were my lemonberry tarts that I posted the recipe for earlier, I probably ate more then half of them myself! I also did a savory cheese cake to spread on crackers and an oil and baguette dip. So fun!

Anyway, I missed the people that couldn't come, but luckily I still have about three months to soak up your company before I go. I know, I'm such a sap, but hopefully it's a good thing!



Green House gets a makeover!


Ever since I set up my blog, I have been BORED BORED BORED with the way it looks. But I'm kind of a slow, and slightly unwilling learner when it comes to things I don't understand immediately, so I left it that way for a while. Today I guess I woke up with a new found sympathy and contempt for my naked blog, so I figured out how to spice it up a bit. Turns out, it wasn't too hard.

As bad as I wanted to go with another color, I couldn't seem to stray from the whole "Green House" theme, so you may see ventures to other areas of the rainbows come in tiny babysteps! I also figured out how to add some music, including the song "Mama" that I raved about a few months ago. I plan to change the music often because I get restless and there is so much good stuff out there I don't know where to start!

I also added my goodreads reviews, thanks to the suggestion of Kris! I can't pitch this website enough, if you're any sort of a reader, you'll love it.

I don't know why I felt the need to narrate the changes, other then the fact that I watch way too much Top Model and my life is slowly turning into an internal fashion show! Enjoy!

What the...?

So, if you have been keeping close tabs, you know that I am fairly obsessed with weight. I am one of those people that could get on a commercial for whatever and give the classic story that you've heard a million times: "I've tried every diet in the book, but after yo-yo-ing my entire life I finally found bla-blaty-blah, and now I'm in better shape then I was when I was twenty."




Okay, the last part's not true YET, but the first part is. I have tried everything. The one diet that worked miracle's for me was Weight Watchers, I think WW is wonderful and I'm convinced that without it I never would have had the confidence to meet my husband the way I did (Lava Hot Springs). But, I'm an old lady now, and my body isn't quite responding to WW the way it did when I was young and my body was resilient. I think the biggest problem is that unless you really do your research, WW is strictly calorie counting. As long as you don't go over your points, you're fine. So you could have twenty points in brownies and donuts for a day and call yourself successful, as long as you don't go over your limit.




At this point in my life, I'm much more concerned with eating a good blend of foods in good portions at the right time. But OH MY GOSH, there are a thousand different books, doctors, nutritionists telling me a thousand different things!




You have the traditional food pyramid with it's entire base consisting of grains, breads, cereals, translated into CARBS! You have the huge low carb craze, including the South Beach diet telling you to completely refrain from anything that has even the slightest wiff of carbohydrate and just eat meat and cheese for a period of time, then you go through the phases and yada yada... You have diets like Body for Life which stresses a proper balance of carbs and proteins, but make sure you fit that Myoplex shake in there three times a day! You have diets that tell you to eat six times a day, including right before bedtime. You have people telling you to stop eating before seven so it doesn't translate to fat while you sleep. They give you Splenda, nutrasweet, and aspartame to artificially sweeten your food, but then find out that they will paralyze you and make you even fatter. You have raw foodism, vegetarianism, veganism. The stores are selling shakes, waters, pills, bars, patches, sprays. My brain is melting from all the confusion and I am starting to smell colors.






The reason I bring this up is because I really want to eat according to what my body needs, but I honestly don't know the right way because there has not been a single "diet" that has come to stay. Diabetes runs rampant in my family, and I fit the profile for the disease like a glove, I had gestational diabetes when I was preggo, and I'm fairly certain that I'm hypoglycemic. After all the years of doctors telling their patients that they need to limit their carbs and increase their protein intake, there is now a book written by a highly researched doctor, telling diabetics that they can reverse their condition and potentially get off medication by cutting out all animal products out of their diet. All meats, dairies, cheeses, eggs, everything, veganism. I have not read the whole book yet, I plan to, but apparently these fats coming from animals, and even from veggies, somehow inhibit the part of the body that deals with insulin.






CRAZY! So now my entire thought process is messed up because since I had Jayda I've been living with the idea that fruit, bread, pasta etc, needed to be avoided, and meat, cheese, eggs, veggies, should be gobbled. I'm skeptical, and my jury is still out on this one. I have my own personal research subjects that are trying it out right now, so we will see how it works for them. I don't know, does anyone know any diabetic vegans? Every person that I know who has practiced the eating style has sworn by it, so I guess we'll see.




Right now, since I'm paralyzed with doubt and fear, I'm trying to keep everything in moderation. Lots of veggies, whole grains, some meat, lots of water. I know that there are some things that I could definitely change, but until I find out what that is, I'm keeping things the way they are. What works for you guys?

Ramble On Teresa, Ramble On...

The house is CLEAN! It is so clean and I LOVE IT! It's crazy how a clean house motivates you to accomplish so many other things, like suddenly you have the capacity to conquer the world, why? Because the house is clean!! AHHHH.

I got a good workout today. I'm starting a weightloss journal for my weightloss goals. I will share them with you later on, unless I'm a failure, then we'll just pretend that we never had this conversation.

For you crazy Twilight fans out there, have you seen the videos for the movie?! Check them out on StephenieMeyer.com, it's going to be sooo good, I hope my Philadelphia friends will go with me to see it!

I find that I get updated on my current news at the gym, because they show serious channels on their TV, so I don't have a choice. I was just introduced to Glenn Beck today and I liked him. I don't know a dang thing about him, but I agreed with his views and he's a little bit of a bully, which makes him fun to watch! I think I'm going to have to look into the situation further...

Speaking of news, can you believe the Texas polygamist bust! I can't even begin to tell you the problems I have with that situation. First of all, it's once again, making our church look bad. Second, you have innocent children taken away from their mothers, granted for their own protection, but c'mon! These kids didn't do anything wrong, and now they have to endure the trauma of being seperated from their families, how messed up are they going to be? I don't know all the details that went into their removal, but I just hope they set them up with a stable situation soon, and that there isn't too much switching and moving. And then today I hear that THREE out of FIVE of all the teen girls from 14-17 were either pregnant or had already given birth. Man, children, with children taken away from their families, it's heartbreaking. I'm not closed minded, and I'm not saying that these people are bad people, but a law is a law, and the law was broken. It all goes back to how it effects the kids, which is poorly. I just hope that the situation gets resolved quickly and responsibly with the kids as a priority. And I'm really glad that I'm not a social worker in Texas!

I just finished reading the Lovely Bones, which was intense. I'm hugging my kids a lot more after having read it. Now I'm reading Kobul Beauty School, which was recommended by my mom and I am LOVING IT. It's about a beautician who works to reestablish the beauty industry in Afganistan after the reign of the Taliban. It's amazing what this woman has the guts to do, and in a way it makes my life seem a little insignificant. But I'm still young, maybe when my kids are grown I'll open a bakery in Iraq or something. Or maybe I'll just help my neighbor pull their weeds, who knows...

Food Ideas!

So, I thought I'd take inspiration from some of my other blogging friends and post some recipes that I thought up in the late hours of the night!

This first one is most likely not original at all, but I kind of threw a bunch of different ideas together. You'll notice that none of my recipes are exact because it's really up to you how many, or how much, how powerful etc, you want.

Lemonberry Tarts

1-2 store bought pie crusts
1-2 cups lemon curd (you can either buy lemon curd, or make it. Most standard cookbooks have a recipe for it, if you can't find it, I'd be happy to send it to you)
1-2 cups sliced strawberries, raspberries, whatever you prefer.

Grease a mini muffin pan. Allow your pie crusts to warm to room temperature. Unroll pie crust and use either biscuit cutter, or round glass or jar to create your individual tart. Place each crust into mini muffin tin to create a cup shape. Poke holes in the bottom and side with a fork. Bake as instructed on the box.

Allow the crusts to cool completely. Fill each tart with lemon curd (1-2 TBS). Top each tart with berries to cover the top (mine were only big enough to fit one sliced strawberries). Chill and devour!

This second one I threw together during one of my crazy "I will make a meal with the last remaining items in my kitchen if it kills me!" stage. My mom had just brought over a carton of tomatoes which were the only fresh ingredients we had in the house. This dish came together by accident, but is now one of our favorites. Again, I don't measure anything when I cook, so it's up to you to taste and gauge how you like it.

Club Pasta
1-2 cups of favorite small pasta (bowties are my fave, but macaroni, penne, rigatoni, small or med shells also good)
8-10 medium tomatoes seeded and dices (use vine ripened if you can)
2 garlic cloves
1-2 cup diced cooked chicken or turkey
1/2-1 cups bacon bits (I really like the FRESH store bought bacon bits, but stay away from the dehydrated salad toppings)
1/2-1 cups shredded mozzerella or provolone cheese
1/4-1/2 cups parm cheese
1-2 TBS fresh parsley if available
garlic salt and black pepper to taste (I put garlic salt in just about everything!)

Prepare your pasta. In a large skillet heat 1 TB olive oil and saute garlic and tomatoes until the skin of the tomatoes are blistered. Add pasta and combine until the pasta is heated through and the juices coat the pasta. Add turkey and bacon pieces until heated. Stir in cheese and seasonings until everything is melted through and combined well. If pasta seems a bit dry, splash a few tsps olive oil. Add parsley last. Serve warm and enjoy!

Not the lightest recipe in the world, but oh so good.

Some kitchen tips
*When you can, cook a whole chicken or turkey just to pick apart and freeze for later. I always like to have ziplock bags of prepared poultry meat because it comes in so handy for last minute meals. Use the freezer ziplock bags, they really do work the best.

*If you are making any type of meal that could possibly be frozen, buy a little extra for that meal and make two pans, one for that night, and one for later. Aluminum casserole pans are cheap, disposable and easy to find. This is always a great alternative to carry out, and way cheaper.

*If you're trying to eat healthy (I always am, but I also always struggle!), buy fresh veggies every shopping trip BUT, rather then letting them go bad in your crisper drawer (GUILTY!), immediately go home, wash them, chop them and put them in a tupperware for an easy grab snack. I love to combine that with the ranch dip packets in low fat sour cream. So much better then potato chips. They are also very handy and available if you want to cook them in meals.

*Speaking of veggies, the frozen veggies at the grocery store are so cheap and easy to pair with just about any meal you are preparing. I also hear that cooking frozen veggies may guarantee that you are getting more nutrients out of them. Fresh veggies tend to lose their nutrients to the oxygen after time.

So those are just some things that have worked for me. I am ALWAYS on the lookout for new recipes, meal ideas, time savers and kitchen tips. So I'd love to know, what works for you?

Girlfriends

A few weeks ago I posted a blog about my HS girlfriends. Now that I am staying at home, I get to see them a lot more. The great thing about that is that while we get to hang out, our kids, who are close to the same age, also get to hang out. Jayda loves to play with them. Kristine refers to the song "Circle of Life" which is so accurate. Who would have thought that almost nine years after HS, our kids would be playing together. So not only do I get awesome girlfriends, so does Jayda!





Skyler update

Ah, my Skyler. Life really doesn't get any better then Skyler. He is growing up cuter and sweeter everyday (am I making you sick yet?)



Skyler is FINALLY starting to crawl, a little, he'll go a few crawls, get impatient, and then start scooting again. It's okay though, he's getting there!



Skyler is finally getting to the age where he can really start to interact with other people. He loves to tease his sister in the double stroller by reaching forward, grabbing her hair and waiting for a reaction.



Skyler is so cuddly, which is heaven for me. And for being such a quiet kid, he loves attention and being held.



I have never seen blue eyes like Skyler's and I don't know if a camera will be able to capture it. They are so bright around the rims, but then get light right in the center. His eyes are so striking, I love having blue eyed kids.

Jayda's updates

One thing I think I will always be able to give Jayda credit for is that life is never boring with her around. Just the other day she cut a huge chunk of hair right off the top of her head, better enhancing her already prominent mullet, I don't have pictures quite yet!

Jayda decided about a month ago that she was not going to be taking naps anymore. Glenn and I relented figuring that maybe she was old enough and could handle going through the day without a nap. At first it worked out and we didn't have any problems. After a few weeks though, we started coming across more and more of this at about five in the evening...






Her behavior also seemed to be declining with each passing day. Finally, after a horrible day at the store and two hours of her constant whining and screaming, I put on my mean mommy face and MADE her take a nap! After a lot of resistant, she finally gave in and is now sleeping like a baby. In fact, everyone in my family except for me is sleeping like a baby, which explains the endless blogging!

Jayda also went through a phase where the only thing she wanted to wear was her fluffy whit church dress. I resisted at first, but finally the skirt was ripped one too many times, so now she can wear it whenever she wants. I even caught her in bed with it one, she had changed after we left her room and just zipped it in the front!



I guess one thing I can be grateful for though is that Jayda's got great taste in jewelry. I caught her flipping through my Lia Sophia catalog while watching Dora, that's my girl!



Jayda has become very comfortable going to the kitchen and just getting what she wants, like pretzels, a string cheese, etc. Sometimes I'm okay with it, sometimes I'm not. This was one of those times that I wasn't. She pulled this out and refused to let me microwave it, it's frozen solid!



Jayda has formed a really sweet bond to her Grandpa J, which has been so fun for me to watch, because besides me and my siblings, I've never really seen my dad interact with other kids. And they really love each other. This is Grandpa J teaching Jayda how to drop goldfish crackers into her mouth. They were at this for probably a half hour!


She's a fun girl, but very busy. I'm looking forward to her growing up just a little more, but I'm also really enjoying her at this age, peeing her pants and everything. This age goes by so fast and there's just no need to rush it!

New Haircut

There is nothing in the world better then a new haircut (except maybe new clothes, new makeup and losing ten pounds!). Here's a picture of mine.


Good Times with the Fam

Now that Jackie is home for a short period of time, I think our whole family is starting to feel the finality of our time with the whole family in one city. In a month my brother Greg will be heading off to Oregon, Jackie is going back to Utah, Kendall and Deanna will be staying in DC for a summer, and we are going to Philly. After this summer, our time together will be limited to holidays and reunions. It's sad, but also inevitable. It's just what happens when families grow up. I'm also so excited for everyone and their new adventures. But in the meantime, it's been so great to get together every Sunday and enjoy our time while it lasts.
