"If you Like Pina Coladas..."

Do you find your brain to be much more creative and free-thinking late at night? Mine is, for some reason I always do my best thinking right around the time I should be dreaming. A few nights ago, while trying to sleep I thought up this...





It's a Pina Colada Trifle, and it was so good. I'm sure it's not exactly an original idea, but I'm pretty proud of it just the same. Trifles are cool because you can do them a thousand different ways. This is how I made mine (rememeber, I don't measure):

1 Yellow Cake mix
1-2 cans crushed pineapple
1-2 cups coconut
1 large box banana pudding prepared according to box
2-3 bananas sliced
1 small container cool whip
maraschino cherries if desired.

Prepare the cake mix in a 9x13 inch pan and let cool. Cut cake into 1 inch squares. In a large bowl layer cake, pineapple, coconut, pudding, bananas and coolwhip several times until layers reach the top of the pan. Complete layers with coolwhip, sprinkle with coconut, and garnish with cherries. If you can, let the cake sit for an hour before serving, the cake gets soaked with the pineapple juice, and even though it's not as pretty, it's so good. If you're feeling really fancy, or serving a small crowd, put the trifle in sundae or margarita glasses for a fun presentation.

You could change a lot about this too, add caramel and pralines, use custard instead of pudding, you really can't mess it up. Have fun!
